Ingredients

  • 7-10 Anaheim Chiles
  • 1/2 lb. lean ground beef
  • 1 onion
  • 2 cloves garlic
  • 2 Roma tomatoes
  • Salt & pepper to taste
  • 1/4 - 1/2 tsp oregano
  • 1/2 tsp cumin
  • 1/8 -1/4 tsp cayenne pepper
  • 1 jalepeno
  • 8 oz. Monterey Jack cheese
  • Tortillas (optional)

Step 1

Roast chiles under broiler or on grill until skin is blistered and charred. Turn often. Place in a large Ziploc bag to steam. Let sit 20-30 minutes. Over a sink, peel the skins gently off the chiles. Rinse any remaining burned pieces off. Set aside.

Brown beef and chopped onion until fully cooked and onion is translucent. Add minced garlic, chopped tomatoes, and minced jalepeno. Cook about 3 minutes, until jalepeno is soft. Add seasonings and cook for 1 more minute.

Spray a 7x11 dish with cooking spray. Cover bottom of pan with cooked chiles, opened to a single layer. Top with half of the grated cheese. Cover with all of
the meat mixture. Top with another layer of remaining chiles. End with the remaining cheese. Bake uncovered in a 350 degree overn for 20 minutes or until cheese is melted.

Good folded into tortillas and eaten burrito style.
