Salmon with Dill and Caper Sauce

  • 2 T olive oil
  • 4 (6 oz) pieces of salmon
  • 1/2 tsp salt, divided
  • 1/2 tsp pepper, divided
  • 1 # green beans, trimmed
  • 1/2 c plain low-fat greek yogurt
  • 2 T lemon juice
  • 2 T chopped fresh dill
  • 1 T chopped capers



Step 1

1. Heat oil in large skillet
2. Sprinkle salmon with half salt and pepper. Cook, turning once, for about 10 min. or until fish is opaque
3. Steam beans. In bowl, whisk yogurt, lemon juice, dill, capers and remaining salt and pepper. Top salmon with a dollop of sauce, sprinkle with dill and serve with beans.
