Ingredients
- 1 1/4 cups flour
- 1/2 tsp baking soda
- 2 Tbsp cocoa powder
- 1/2 tsp cinnamon
- 3/4 tsp ancho or chipotle chili powder
- 3 oz unsweetened chocolate (3 squares)
- 1/2 cup sugar 1/2 cup canola oil
- 1/2 cup brewed coffee, cooled
- 2 eggs, beaten
- 1 tsp vanilla extract
- 1/4 cup dark-chocolate chips

Preparation
Step 1
Preheat oven to 350°F. Spray a 9-inch square baking pan with cooking spray.
In a large bowl, whisk together the first five ingredients and set aside.
In a microwave on Low or 50 percent power, melt chocolate squares, stirring often to avoid burning. Cool for about 5 minutes, then whisk in sugar, oil, coffee, eggs, and vanilla extract.
Pour batter into prepared pan and bake for 20 to 25 minutes, until a wooden toothpick inserted into the center comes out clean.
Makes 16 servings.
