Ingredients

    Tbsp cocoa powder

    tsp cinnamon

    tsp ancho or chipotle chili powder

    oz unsweetened chocolate (3 squares)

    cup sugar ½ cup canola oil

  • ½

    cup brewed coffee, cooled

  • 2

    eggs, beaten

  • 1

    tsp vanilla extract

    cup dark-chocolate chips

Directions

Preheat oven to 350°F. Spray a 9-inch square baking pan with cooking spray. In a large bowl, whisk together the first five ingredients and set aside. In a microwave on Low or 50 percent power, melt chocolate squares, stirring often to avoid burning. Cool for about 5 minutes, then whisk in sugar, oil, coffee, eggs, and vanilla extract. Pour batter into prepared pan and bake for 20 to 25 minutes, until a wooden toothpick inserted into the center comes out clean. Makes 16 servings. Per serving: 150 cal, 11 g fat (3 g sat), 11 g carbs, 55 mg sodium, 2 g fiber, 3 g protein
