Ingredients
- 1 lb. fresh mushrooms, sliced
- 1 medium onion, finely chopped
- 1/4 c. plus 2 Tbs. Butter
- 1/3 c. flour
- 3 c. chicken broth
- 2 c. half and half
- 1 tsp. salt
- 1/4 tsp. white pepper
- 1/2 c. dry sherry or vermouth
- 1/4 tsp. Angostura bitters
Preparation
Step 1
Sauté mushrooms and onion in butter in heavy saucepan over low heat for 10 minutes or until vegetables are tender. Add flour, stirring until smooth. Cook 1 minute, stirring constantly. Gradually add broth; cook over medium heat, stirring constantly, until thickened and bubbly.
Reduce heat to low; stir in remaining ingredients. Cook just until thoroughly heated, stirring frequently. Serve immediately.
