WALNUT GORGONZOLA SALAD

Ingredients

  • Salad Mixture:
  • Romaine, Spinach, Radicchio
  • Honey Mustard Salad Dressing:
  • 1/3 c. extra-virgin olive oil
  • 1 1/2 Tbs. balsamic vinegar
  • 4 tsp. honey
  • 1 Tbs. Dijon mustard
  • 1/2 tsp. salt

Preparation

Step 1

Whisk in a bowl, cover and refrigerate.

Caramelized Walnuts:
In a heavy 8- to 10-inch pan, combine 6 tablespoons sugar and 2/3 cup walnut pieces. Shake and stir often over medium-high heat until sugar is melted and amber-colored, about 5 minutes. Pour onto a piece of foil and spread into a thin layer. Let cool until hard, about 7 minutes. Break into small pieces.
When ready to assemble salad, toss salad mixture together with caramelized walnuts and crumbled Gorgonzola cheese; then pour dressing over and mix well.
