PICKLED BEETS

There's no formal recipe for this, just the ingredients that Mother made every Easter time. Spring would not be spring without pickled beets and eggs.

Ingredients

  • In saucepan, combine and heat:
  • 1 stick of cinnamon
  • Whole allspice
  • Little bit of ground cloves
  • Little bit of ground allspice
  • Sugar & vinegar in equal quantities
  • Little bit of salt

Preparation

Step 1

Pour off some of the beet juice from the cans and add beets to the hot mixture. Simmer on the stove for half an hour before allowing to cool. [NOTE: heating simply hastens the process by which the beets are pickled. The same results occur if you put the beets in the unheated pickling liquor and leave them there for several days.]
