Carrot and Sweet Potato Mash

This? Is nothing special to look at. It is, in two words, very orange.

But, for those of you A) looking for a healthier alternative to mashed potatoes, B) feeding picky children and/or adults, or C), who like orange, this is the motherlode.

Adapted from a popular side dish from All Recipes, Carrot and Sweet Potato Mash is a powerhouse of solid nutrition and appealing flavor. For one thing, you will never find a recipe with more Vitamin A, though the allotments of fiber and Vitamin C aren't too shabby, either. For another thing, well, it's just really, really good.

Despite a slight textural difference, the carrots and sweet potatoes mesh (or is it mash?) unexpectedly well. The addition of unsweetened applesauce and brown sugar make the dish moist and ever-so-slightly sweet, while the raisins, quite literally, give you something to chew on.

Oh, and while adults will appreciate this recipe, kids will go absolutely nutso bonkers insane for this. Try it on your family today, especially if they're into the color orange.

Ingredients

  • 16 ounces carrots (about 4 medium)peeled and cut into 1/2-inch rounds
  • 12 ounces sweet potato (about 2 medium), peeled and cut into 1/2-inch pieces
  • Kosher salt
  • 2 tablespoons butter
  • 1/2 cup unsweetened applesauce
  • 1/3 cup unpacked light brown sugar
  • 1/4 teaspoon pumpkin pie spice or allspice
  • 1/2 cup raisins

Preparation

Step 1

1 Place carrots in medium pot and just cover with salted water. Over high heat, bring to a boil. Add sweet potatoes. Once boiling again, reduce heat to a rolling simmer and cook until carrots and sweet potatoes are tender, 20 to 30 minutes. Drain.

2 When carrots and sweet potatoes have 3 minutes left to cook, melt butter in a small pan over medium heat. Add brown sugar and applesauce and quickly stir to combine. Once brown sugar is dissolved, about 30 to 60 seconds, pour butter mixture into serving bowl.

3 Add drained carrots and sweet potatoes to butter mixture. Add spice and salt to taste. Mash with potato masher to preferred consistency. Stir in raisins. Let sit 2 minutes until raising plump. Serve.
