Ingredients

  • ¼

    c butter

  • c flour

  • c milk

  • 4

    c. shredded cheddar cheese

  • ½

    c pizza blend cheese

  • ½

    c Parmesan cheese (divided)

  • 1

    tsp Dijon mustard

  • ½

    tsp salt

  • ¼

    tsp cayenne pepper

  • 1

    lb penne rigati pasta

  • 1

    tbsp butter

  • ½

    c fresh breadcrumbs

Directions

1. Boil past for 2 minutes less than the recommended than time on package and drain. 2. Melt ¼ c butter in a saucepan over medium heat. 3. Whisk in flour until blended; cook for 1 minute, whisking. 4. Slowly whisk in milk; bring to a boil, whisking. 5. Reduce heat to low, simmer 5 minutes, until slightly thickened. 6. While sauce is simmering put the cheddar cheese, pizza blend cheese and ¼ c parmesan cheese into a microwave safe bowl and microwave until melted (stirring occasionally). 7. Add the mustard, salt and cayenne pepper to the milk sauce. 8. Add the milk sauce to the cheese and stir. 9. Preheat oven to 350 degrees. 10. Prepare a casserole dish with cooking spray. 11. Pour drained pasta into casserole dish. 12. Add ½ of the cheese sauce and mix up then add the rest of the cheese sauce. 13. Melt 1 tbsp of butter in a bowl and mix with the breadcrumbs and ¼ c of Parmesan. Sprinkle the cheese/butter mixture over the pasta and cheese. 14. Bake uncovered for about 40 minutes until top is golden and sauce is bubbling.
