Dumpling roll

These are simple dumplings made with flour, baking powder, milk and shortening which are rolled out and cut into shapes and cooked in broth. "getting the dough to stick together without overworking it, just wrapped the doughball in plastic wrap and let it "rest" in the fridge for about 15 minutes before trying to roll it out.

  • Serves 8- Puff up very large

    cups all-purpose flour

  • 2

    teaspoons baking powder

  • 1

    teaspoon salt

  • cup shortening

  • ½

    cup milk

  • 2

    (14.5 ounce) cans chicken broth


1. Combine flour, baking powder and salt. Cut in shortening and add milk to make a stiff dough. 2. Roll out to about 1/8 inch thickness and cut into 1 inch squares, 1 to 1 1/2 inch strips or diamonds. Sprinkle lightly with flour and drop into boiling chicken stock. Cover tightly and boil gently for 8 to 10 minutes
