Chewy Chocolate Chip Cookies

Ingredients

  • 1 1 1 cup (2 sticks) unsalted butter
  • 2-1/4 2-1/4 2-1/4 cups bread flour or all-purpose flour
  • 1 1 1 tsp kosher salt
  • 1 1 1 tsp baking soda
  • 1/4 1/4 1/4 cup sugar
  • 1-1/4 1-1/4 1-1/4 cup brown sugar
  • 1 1 1 egg
  • 1 1 1 egg yolk
  • 2 2 2% Tbsp 2% milk
  • 1-1/2 1-1/2 1-1/2 tsp vanilla extract
  • 2 2 2 cups chocolate chips

Preparation

Step 1

In a heavy-botton saucepan, melt the butter over low heat. Transfer to a large mixing bowl. In another bowl, sift together the flour, salt and baking soda and set aside.

Add the sugar and brown sugar to the melted butter and cream on medium speed, about 3 min. Add the egg and egg yolk, milk and vanilla extract and mix until well combined. Slowly incorporate the flour mixture until thoroughly combined. Stir in the chocolate chips.

Chill the dough about 45 min.

Preheat the oven to 375 deg.

Line several baking sheets with parchment paper. Scoop the dough onto the baking sheet. For large cookies, place 6 cookies per sheet.

Bake for 14 min or until golden brown, checking the cookies after 5 min. Rotate the baking sheet for even browning. Remove from oven and cool 1 min on the sheet. Transfer to a wire rack and cool completely.

NOTE: I bake the cookies at 365 deg for ~ 8 min. Maybe it's my oven but they would be weapons if I baked them for 14 min.
