Ingredients

    * ½ cup butter, softened

  • * 1¼ cups sugar

  • * 1¼ cups cooked mashed pumpkin (fresh or canned)

    * 2 eggs

  • * 1½ cups flour

    * 2 tsp. baking powder

    * 1 tsp. cinnamon

  • ¼

    * ¼ tsp. nutmeg

    * 1 cup milk

  • ¼

    * ¼ cup chopped walnuts or pecans

  • ½

    * ½ cup raisins

  • 1

    * 1 tsp. cinnamon mixed w/ ¼ c. sugar

Directions

1. preheat oven to 400 degrees F. 2. grease muffin cups 3. cream together butter and sugar. 4. add the pumpkin, mixing until smooth 5. add eggs, blending well 6. combine flour, baking powder and spices alternately w/ the milk to the pumpkin mixture. 7. fold in the nuts and raisins 8. fill muffin cups 2/3 full, and sprinkle tops w/ the cinnamon and suger mixture. 9. bake 25 min. * makes 2 dozen.
