Marinated Cauliflower

Ingredients

  • 1 large head cauliflower
  • 1/2 ½ cup oil
  • 1/3 cup wine vinegar
  • 1 clove garlic, finely chopped
  • 1/3 cup fresh mint
  • Salt and pepper

Preparation

Step 1

Break the cauliflower into florets; cook in salted boiling water for about 5 minutes, or until tender-crisp. Drain well.

Place the cauliflower in a bowl. Add the oil, vinegar, garlic, and mint; toss gently. Season with salt and pepper to taste; chill at least 30 minutes.
