Grilled Fruit Sundae

Ingredients

  • 1 pint strawberries, washed, hulled, and pat dry
  • ½ pint blueberries
  • 3 tbs. sugar
  • 2 tbs. orange flavoured liquor
  • 2 peaches
  • 1 small pineapple, peeled, cored, cut into thick rings
  • 2 tbs. liquid honey
  • 16 small scoops of ice cream

Preparation

Step 1

Combine the berries, gently stir in the sugar and liquor. Place the fruit into a 9 inch pie plate and cover with foil. Slice unpeeled peaches in half, remove and discard the pits. Brush the peaches and pineapple with honey. Place the pie plate, peaches, and pineapple on the grill. Barbeque until the berries are warmed and saucy, and grill marks form on the peaches and pineapple, about 8 – 10 minutes. When cool, slice the peaches into wedges and pineapple into chunks. Scoop ice cream into 8 bowls and top with hot, saucy berries and fruit chunks.
