Vanilla Sauce

Ingredients

  • 32 oz. half and half cream
  • 8 oz. sugar
  • 12 egg yolks
  • 1 tbs. vanilla extract

Preparation

Step 1

Bring the half and half and ½ the sugar to a boil. In another bowl whip together the egg yolks and the remaining sugar. Slowly temper the eggs with the cream mix. Return the mix to the stove and stir constantly over medium heat with a wooden spoon, until the sauce coats the back of a spoon. Stir constantly and heat only to 185 degrees. Strain the mix into a clean bowl over and ice bath. Add the vanilla and chill
