Ingredients

  • Crust:
  • 1 stick butter
  • 1 c. flour
  • ¼ c. powdered sugar
  • Filling:
  • 2 eggs
  • 2 T. lemon juice
  • grated rind of 1 lemon
  • 2 T. flour
  • ½ tsp. baking powder
  • 1 c. sugar
  • 3 drops yellow food color if desired

Preparation

Step 1

Cut in crust ingredients and press firmly into a 9 x 9 inch pan. Bake at 350 degrees for 5 minutes.

Mix and pour filling ingredients over warm crust. Bake at 350 degrees for 25 minutes or until lightly golden brown. When cool, sprinkle with powdered sugar.
