Chickpeas Corn and Red Pepper Salad

  • 1 dash pepper
  • 1/2 tsp salt
  • 1 tbsp vinegar
  • 1 tbsp olive oil
  • 1/4 cup coriander
  • 1 cup corn
  • 2 tbsps chopped spring onions
  • 1 cup chopped red pepper
  • 2 cups chickpeas



Step 1

1.Place rinsed corn and chickpeas in a bowl.
2.Add red pepper and onion diced finely.
3.Add coriander, salt, pepper, vinegar and olive oil. Toss well.
4.Note: optional to include canned 3 bean mix or parsley.
