Ingredients
- 1 TBS Vegetable oil
- Cooking Spray
- 1 pound skinned, boned chicken breast, chopped
- 1/2 c chopped shallots
- 3 garlic cloves, minced
- 1/2 tsp dried oregano
- 1/2 tsp coriander seeds, crushed
- 1/4 tsp ground cumin
- 1 (14.5-ounce) can no-salt-added whole tomatoes, undrained and coarsely chopped
- 1 (14.5-ounce) can fat-free less-sodium chicken broth
- 1 (11 oz) can tomatillos, drained and coarsely chopped
- 1 (4.5-ounce) can chopped green chiles, undrained
- 2 (16 oz) cans cannellini beans or other white beans, drained
- 3 TBS lime juice
- 1/4 tsp black pepper
- 9 TBS (4 oz) shredded reduced-fat sharp cheddar cheese

Step 1
1. Heat oil in a large saucepan coated with cooking spray over medium-high heat until hot. Add chicken; saute 3 minutes or until done. Remove chicken from pan.
2. Add shallots and garlic to pan; saute 2 minutes until tender. Stir in oregano and next 6 ingredients. Bring to boil; reduce heat, and simmer 20 minutes. Add chicken and beans; cook 5 minutes or until thoroughly heated. Stir in lime juice and pepper. Ladle into bowls; top with cheese. Yield: 9 servings (serving size: 2 cup chili and 1 TBS cheese.)
