Spring salad with Peach Vinaigrette

Ingredients

  • 4 med ripe peaches, peeled
  • 2 tbspn sugar
  • 2 tbspn lemon juice
  • 3 tbspn balsamic vinegar
  • 1/4 tspn salt
  • 1/3 cup veg oil
  • 6 cups mixed salad greens + arugula
  • 1 small red onion, halved and thinkly sliced
  • 1/2 cup thinly sliced cucumber
  • 6 bacon strips cook and crumbled-optional
  • 1/3 c chopped pecans, toasted

Preparation

Step 1

slice 3 peaches, set aside
cut remaining peach in half; place in immersion blender, add the sugar, lemon juice, vinegars, and salt; cover and process until blended. while processing, gradually add oil in a steady stream
In a lg bowl, combine the salad greens, lettuce, onion, and cucumber. Pour about 2/3 cup dressing over salad and toss to coat. Transfer to a serving platter; top with sliced peaches and bacon. Drizzle with remaining dressing; sprinkle with toasted pecans. serve immediately
