Old Fashioned Peanut Brittle (Esther Tite)

Ingredients

  • 2 cups sugar
  • 1 cup light corn syrup
  • 1/2 cup water
  • 1 cup butter
  • 2 cups raw, unsalted peanuts
  • 1 teaspoon baking soda
  • coconut (optional)

Preparation

Step 1

In a large pan, 3 quarts or more,
Heat sugar, corn syrup and water,
Stirring until sugar dissolves, when it boils blend in butter.
Stir frequently. After temp. reaches 230,add peanuts.
When temp. reaches 280, stir constantly to hard crack stage,300 degrees.
Remove from heat and quickly stir in soda, mix well.
Pour into already buttered cookie sheet which has been lined
with coconut. When candy is cooled and hardened,
loosen from pan and break up. Makes 2 1/2 pounds.

This is my own recipe, and people like the coconut in it
