  • 1 1/2 c whole wheat flour
  • 1/4 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 2 tbsp unsalted butter, softened
  • 2 tbsp canola oil
  • 1 cup sugar
  • 3 large eggs
  • 2 1/2 tsp vanilla extract
  • 12 oz reduced fat cream cheese
  • 1 tbsp cornstarch
  • 4 tsp freshly grated lemon zest
  • 3 c fresh or partially thawed frozen blueberries

Step 1

1. Preheat oven to 350 degrees and coat a 9x13 baking dish with nonstick spray.

2. Whisk the flour, baking powder, baking soda, and salt in a medium bowl.

3. In another bowl beat the butter, oil and ½ cup sugar with an electric mixer in a mixing bowl until smooth.

4. Add 1 egg and 1 tsp vanilla. Beat until smooth.

5. Add the dry ingredients and mix with a rubber spatula just until the dry ingredients are moistened.

6. Transfer the dough to a prepared baking dish and use the spatula to press dough into an even layer.

7. Bake uncovered about 20 minutes (until puffed and starting to brown around the edges).

8. Blend the cream cheese, ½ cup sugar and cornstarch with an electric mixer or food processor until smooth and creamy.

9. Add 2 eggs, lemon zest and 1 1/2 tsp vanilla.

10. Beat or process until smooth.

11. Spread the blueberries over the crust. Pour the cream cheese batter over the blueberries and spread evenly.

12. Bake the bars until the filling has set 35-40 minutes.

13. Let cool completely in the pan then cut into 24 bars with a sharp knife that’s been coated with nonstick spray.
