Ingredients
- 4 potatoes
- 4 bacon slices
- 1/4 ¼ cup melted butter
- 1 cup grated cheddar cheese
- 1 diced tomato
- 1 diced green pepper
- 1 chopped onion
- Sour cream, to garnish
Preparation
Step 1
Wash and bake the potatoes at 350 degrees for 50 minutes, until cooked. Fry bacon, dry grease and crumble. Cut potatoes in ½ and scoop out the insides. Drench the skins in butter and place under the broiler for 2 – 3 minutes. Place a little cheese into each skin, sprinkle with tomatoes, pepper, and onions. Top with more cheese, and place under the broiler for 3 – 5 minutes.
