CASA'S SALAD

One of the family restaurants still in Fort Wayne is Casa's--now in various locations throughout the city. The restaurant is known for its house salad, which is supposedly a secret, but someone either leaked the recipe or figured it out because this recipe did appear in a Fort Wayne paper several years ago.

Ingredients

  • Dressing:
  • 6 anchovies
  • 8 oz. wine vinegar
  • 3/4 tsp. oregano
  • 1 1/2 tsp. pepper
  • 1 Tbs. salt
  • 1 1/4 oz. sugar
  • 1 1/2 tsp. garlic salt
  • 1/4 c. cornstarch
  • 1 pint (16 oz.) oil
  • Blend the first 8 ingredients in a blender. Pour in oil in a stream.
  • Salad:
  • Iceberg and romaine lettuce, torn
  • Sweet red pepper, chopped
  • Green onions, chopped
  • Parmesan, Romano, provolone and mozzarella cheeses, grated
  • Croutons and bacon pieces

Preparation

Step 1

Toss all except the croutons and bacon. Add dressing 15 minutes before serving. Add croutons and bacon at serving time.
