OATMEAL COOKIES

Ingredients
- 7 Tbs. water
- 1 c. raisins
- 2 c. flour
- 2 c. uncooked old-fashioned rolled oats
- 1 tsp. baking soda
- 1 c. shortening (prefer vegetable)
- 1 c. sugar
- 2 eggs, lightly beaten
- 2 tsp. vanilla
- 1 scant c. chopped walnuts
Preparation
Step 1
In a small saucepan, bring water and raisins to a boil. Remove pan from heat and cool completely.
In large bowl, stir flour, oats and baking soda together. Set aside. In separate bowl, beat shortening with sugar until combined. Beat in eggs, then vanilla. Beat in flour mixture until combined. Drain raisins and stir into dough along with walnuts.
Drop by heaping teaspoonsful onto greased baking sheet, leaving 2 inches between cookies. Bake at 350° for 12 - 15 minutes or until lightly browned. Cool cookies on baking sheet for 3 minutes before transferring them to a wire rack to cool completely.
