Spiced Almonds

Ingredients

  • 2 t. salt
  • 1/2 t. ground cumin
  • 2 t. ground ginger
  • 1 t. crushed red pepper flakes
  • pinch of cayenne pepper
  • 1/4 c. sesame seeds
  • 1/4 c. sugar
  • 2 T. vegetable oil
  • 3 c. whole almonds or cashews
  • 1/2 c. sugar

Preparation

Step 1

Combine salt, cumin ginger, pepper flakes, cayenne, sesame seeds and 1/4 c. sugar in a lg. bowl. Heat oil in a heavy skillet over medium heat. Add nuts and cook and stir continuously for 2 minutes or until fragrant. Sprinkle 1/2 c. sugar over nuts and shake pan occasionally to prevent burning. Stir only when sugar starts to melt and caramelize. Remove skillet from heat when nuts are dark golden brown.

Immediately add nuts to spice mixture and toss quickly to coat well. While still hot, spread nuts on a nonstick baking sheet and separate from one another. When cool, tfr. to an airtight container and store up to 2-3 weeks.
