MICROWAVE STRAWBERRY TAPIOCA

Ingredients

  • 2 cups water
  • 1/3 cup quick tapioca
  • 2-10 oz. pkg. frozen, sweetened strawberries
  • 1 cup whipping cream
  • 2 Tbs. sugar

Preparation

Step 1

Combine water and tapioca in 2 qt. glass bowl. Microwave, uncovered, on high for 3 1/2 to 4 minutes, stirring once, until mixture boils and thickens.
Microwave strawberries 1 – 1 1/2 minutes to loosen from package. Add to hot tapioca and stir until thawed.
Beat whipped cream and sugar until thick and fold into strawberry tapioca mixture. Refrigerate and chill.
