Ingredients
- 3 c. rotisserie chicken breast meat
- 2 large tomatoes
- 1 c. carrots
- 1 c. corn kernels
- 1/2 c. salsa verde
- 2 clove garlic
- 1 tsp. chili powder
- 3 oz. baked whole-grain tortilla chips
- 1/2 c. crumbled feta cheese
- Cilantro leaves
- Hot pepper sauce
Preparation
Step 1
Preheat oven to 400 degrees F. Spray 2-quart baking dish with nonstick cooking spray.
In large bowl, combine chicken, tomatoes, carrots, corn, salsa verde, garlic, and chili powder.
In baking dish, arrange one-third of chips; top with half of chicken mixture, then half of feta; repeat layering. Arrange remaining chips on top. Bake 20 minutes or until hot. Top with cilantro. Serve with hot pepper sauce.
