Scalloped Potatoes #2 *(GOOD)*

Ingredients

  • 1/4 cup butter
  • 3 tablespoons all-purpose flour
  • 2 teaspoons chopped chives, divided
  • 1 teaspoon salt
  • 1/2 teaspoon dry mustard
  • 1/8 teaspoon pepper
  • 1 3/4 cups milk
  • 4 medium potatoes, sliced

Preparation

Step 1

Microwave butter in 2-quart casserole at high 45 seconds to 1 1/4 minutes, or until melted. Stir in flour, chives, salt, dry, mustard and pepper. Blend in milk. Microwave at high 5 to 7 minutes, or until thickened, stirring every other minute.

Mix in potatoes. Cover. Microwave at high 15 to 20 minutes. or until potatoes are tender, stirring 2 or 3 times.

*Variation*:
Scalloped Potatoes Au Gratin: Add 3/4 to 1 cup grated cheese to sauce. Stir until melted.
