Ingredients
- 3 cups flour
- 2 tsp. baking soda
- 1/2 tsp. salt
- 3 tsp. cinnamon
- 1 1/2 cups salad oil
- 2 cups sugar
- 2 cups grated carrots
- 1 small can crushed pineapple
- 1/2 cup chopped nuts
- 2 tsp. vanilla
- 3 eggs

Preparation
Step 1
Sift together flour, soda, cinnamon and salt. Mix salad oil and sugar. Add half of dry ingredients; mix well and beat in carrots, pineapple and nuts. Add vanilla and remaining dry ingredients.
Add eggs, one at a time, and beat well after each addition until well blended.
Bake in a greased 8x12x2-inch pan at 350F until brown and toothpick comes out clean (approx. 40 minutes).
Ice with cream cheese frosting.
