Ingredients
- Chocolate sauce:
- 2 1/4 lb. ripe pears
- 4 1/2 oz. unsalted butter
- 5 1/2 oz. sugar
- 1 Tbs. Poir William brandy (optional)
- Vanilla ice cream to serve
- 5 1/2 oz. bitter chocolate
- 3 Tbs. cream
- confectioner's sugar to taste

Step 1
Quarter, core and peel pears. In heavy frying pan, melt 3/4 of the butter over a low heat. Sprinkle in 3/4 of the sugar and swirl the pan until coated. Take pan off the heat, add the pears and return to moderate heat and cook for 10 minutes. Turn the pear, dot with the rest of the butter and sprinkle with the sugar. Cook over low heat for 10 - 15 minutes until golden.
Meanwhile, break the chocolate into small pieces and combine with 2 Tbs. water in a heaavy saucepan. Melt over a low heat, stirring occasionaly. Before serving, stir in the cream and confectioner's sugar to taste. Sprinkle pears with liquer, serve ice cream and sauce on side.
