Ingredients

    29-oz. can sliced peaches with juice

  • 6

    Tblsp sugar

  • 2

    cups flour

  • 1

    tsp baking powder

  • 1

    tsp baking soda

  • 1/4

    tsp salt

  • 1

    tsp cinnamon

  • 1 1/2

    cups sugar

  • 1/2

    cup butter

  • 2

    eggs

  • 1

    tsp vanilla

  • 1

    cup chopped pecans (optional)

Directions

Puree peaches, peach juice, and 6 Tblsp sugar until smooth. Cream together butter and 1 1/2 cups sugar. Add eggs, beating well, then stir in vanilla. Add dry ingredients alternately with pureed mixture; stir just to combine. Fold in nuts. Pour batter into greased and floured 9x5 loaf pans. Bake at 325 degrees for 55-60 minutes or until toothpick comes out clean. Cool 10 minutes in pans before turning out to cool.
