Ingredients

  • 2-3 lbs. lean ground beef

  • 4 cups chopped onion (7 med onions)

  • 1 lb. mushrooms chopped

  • 2 cups celery chopped

  • 12 large cloves garlic minced

  • 1 large green pepper, chopped

  • 3-4 Tbsp chili powder

  • 2 Tbsp plus 1 1/2 tsp all purpose flour

  • 4 tsp salt

  • 1 Tbsp sugar

  • 1 Tbsp ground cumin

  • 1 Tbsp ground coriander

  • 1 Tbsp dried oregano leaves

  • 1-2 Tbsp crushed red pepper

  • 2 cans (16 oz each) whole tomatoes chopped

  • 1 can tomato sauce (15 oz)

  • 1 can tomato sauce (8 oz)

  • 1 can tomato paste (6 oz)

  • 3 cans red kidney beans (16 oz each)

  • 1 square (1 oz) unsweetened chocolate (optional)

  • ground pepper

Directions

In cooker-steamer on “Hi” cook ground beef until browned. Add onion, garlic, celery and green pepper. Cook until vegetables are tender. Add chili powder, flour, salt, sugar, cumin, coriander, oregano, pepper, whole tomatoes, mushrooms, tomato sauce and tomato paste. Reduce heat setting to “3” or “4”. Simmer covered 1 hour. Stir occasionally. Stir in beans and chocolate. Simmer covered 20-30 minutes. Stir before serving.
