Ingredients

  • 6 c chicken or vegetable stock
  • 1 c fine noodles
  • 1 c fresh Asparagus or brocolli or snow peas or frozen peas
  • 4 eggs
  • 1/4 c parmesan cheese
  • 1 pinch nutmeg

Preparation

Step 1

Boil stock, add noodles and vegetables for 5 minutes.

In bowl whisk eggs, cheese and nutmeg. Slowly pour into stock, stirring constantly.
Reduce heat and simmer for 3 minutes.
