Mexican Sweet & Sour Chicken

Ingredients

  • 6 whole chicken breasts, boned
  • 1 pkg. (1 1/4 oz.) taco seasoning mix
  • 1 bottle (8 oz.) Russian salad dressing
  • 1 jar (10 oz.) apricot preserves
  • 2 Tbsp. butter
  • 1/3 cup butter
  • 2 cans (8 oz.) tomato sauce
  • 2 pkg. (1 3/8 oz.-each) Mexican rice seasoning mix
  • 1 cup long-grain rice
  • 3 cups cold water

Preparation

Step 1

Wash chicken breasts and pat dry. Make sweet and sour glaze by mixing taco seasoning, salad dressing and apricot preserves. Dip chicken into mixture. Put in baking dish with melted butter. Bake, covered, at 325 for 30 minutes. Uncover, pour off excess sauce into saucepan and return to 350 oven until brown, 15 minutes.

FOR RICE:
Combine rice seasoning, long-grain rice, tomato sauce, butter and cold water in 3 quart saucepan. Bring to boil; stir immediately with fork, cover and turn down to mid-low head. Cook 20 minutes (or until water absorbs). Fluff with fork. Place rice under chicken breasts and cover with remaining sauce.
