Ingredients
- For orange dressing:
- 1/2 cup orange juice
- 2 tsp. dijon mustard
- 1 Tbsp. olive oil
- 2 tsp. orange zest
- 2 Tbsp. parsley, chopped
- For the couscous:
- 1 Tbsp. olive oil
- 1/2 tsp. curry powder
- 1/4 tsp. cayenne pepper
- 1 1/4 cup chicken broth
- 1 1/4 cup dry couscous
- 1/2 cup dried apricots, cut into strips
- 1/2 cup dried cherries
- 1/2 cup golden raisins
- 1 cup frozen peas
- 1/2 cup red onion, chopped
- 1/2 cup fresh spinach, julinned

Step 1
Whisk the dressing ingredients together in a medium bowl then set aside.
Preheat a large skillet over medium heat. Add olive oil and heat for one minute. Add the curry powder and cayenne pepper and heat for another minute. Add the broth, increase the heat to medium high and bring to simmer.
Stir in the couscous, apricots, cherries, raisins, peas, onion and spinach. Cover and remove from heat. Let couscous stand until all the liquid has been absorbed. Fluff couscous with fork, add orange dressing and fluff once more.
