Lemon Poppy Seed Muffins

Ingredients

  • 1 ¾ cups flour
  • ½ cup sugar
  • 1 tbs. poppy seeds
  • 1 tbs. finely shredded lemon peel
  • 2 tsp. baking powder
  • ½ tsp. salt
  • 1 beaten egg
  • ¼ cup oil
  • 2 tbs. butter, melted
  • 2 tbs. sugar
  • ¾ cup milk

Preparation

Step 1

Stir together the flour, sugar, poppy seeds, peel, powder, and salt. In another bowl combine the egg, milk, and oil. Add the egg mixture to the flour mixture and stir just until moistened; spoon mixture into muffin cups. Bake at 375 degrees for 20 – 25 minutes.
