Steak and Potato Salad

Ingredients
- For Marinade:
- ½ cup red wine vinegar
- ¼ cup EVOO
- ¼ cup soy sauce
- 1 sirloin steak – about 2 ½ pounds
- 4 red skinned new potatoes, scrubbed and quartered
- 1 scallion (3 inches of green left on), thinly sliced
- 1/3 cup yellow bell pepper – diced
- 1/3 cup red bell pepper – diced
- ¼ cup red onion – diced
- 5 T chopped flat-leaf parsley
- Finely grated zest of 1 orange
- 1/3 cup garlic vinaigrette
- Boston lettuce leaves

Preparation
Step 1
1. Combine marinade in bowl; coat steak well and let rest at room temperature for 2 hours, turning twice
2. While steak marinates, cook potatoes until tender but firm. Drain and cool to room temp.
3. Remove steak from marinade and broil/grill it for medium rare meat. Let rest for 10 min. then slice steak ½ inch thick on the diagonal, then cut the slices in half lengthwise into thinner strips.
4. Combine steak, potatoes, scallion, peppers, red onion, 4 T parsley and orange zest in bowl. Season with salt and pepper. Toss with Garlic Vinaigrette, adding more if desired
5. To serve, arrange the lettuce leaves on plate; spoon the salad atop and sprinkle with remaining parsley
