FRESH CREAM OF MUSHROOM SOUP

Ingredients

  • 8 oz. sliced fresh mushrooms
  • 2 Tbs. butter or margarine
  • 2 Tbs. flour
  • 2 c. chicken or beef bouillon
  • 1/2 c. light cream
  • 1/2 tsp. salt
  • 1/4 tsp. pepper

Preparation

Step 1

Cook mushrooms in butter for about 5 minutes. Blend in flour; add broth. Cook and stir until the mixture is slightly thickened. Cool slightly. Add cream and pepper. Heat through without boiling. Serve at once.
