Ingredients
- 1/3 cup skim milk/1%
- 2 large egg whites
- ¼ cup oil
- ½ cup flour
- ½ cup sugar
- 3 T unsweetened cocoa powder
- 1 ½ tsp vanilla
- ¼ tsp salt
Preparation
Step 1
In food processor, combine all ingredients and process till smooth. Cover and refrigerate over night. Remove batter from fridge 30 minutes before cooking. Heat non-stick crepe pan over medium heat, brush with oil. Stir batter and pour ¼ cupful into pan. Immediately tilt pan to spread batter. Cook 1 minute or until edges look dry. Cook 1-2 minutes other side. Lift out and quickly drape over rolling pin. It will become firm as it cools. Fill with mixed berries, sorbet and decorate with fresh mint if available.
