Slow Cooked Pork and Apricots

Ingredients

  • What You Will Need:
  • 1 ½ lb pork tenderloin, cut into 2 inch pieces
  • 1 bag (2 C) dried apricots
  • 1 large Vidalia onion, chopped
  • 3 sweet potatoes
  • 1 can low sodium chicken broth
  • 1 (6 oz) can tomato paste
  • What You Already Have at Home:
  • 1 T garlic, minced
  • 1 tsp all spice
  • 1 tsp ginger
  • 1 tsp nutmeg
  • 1 tsp cinnamon
  • 1 bay leaf
  • 1 tsp garlic salt
  • Slow cooker

Preparation

Step 1

1) Mix everything in slow cooker. Make sure sweet potatoes lay over top.
2) Turn on low and cook for 9 hours.
3) Remove sweet potatoes. Peel sweet potatoes. The skin should come off easily.
4) Stir pork mixture. Pork should break up as you mix.
5) Cut up sweet potatoes into 1 inch pieces and mix back into pot.
6) Serve over top couscous.
