Oyster Stuffed Mushrooms

Ingredients
- 1 tsp olive oil
- 2 T finely chopped onion
- ½ tsp minced garlic
- 1 (3 oz) pouch smoked oysters, drained and chopped
- ¼ cup seasoned bread crumbs
- 2 T Parmesan cheese
- 2 T white wine
- 1 lb mushrooms, stems removed
- 1 small jar pimentos, drained and chopped

Preparation
Step 1
Preheat oven to 350. Heat oil in skillet. Add onion and garlic and cook over low heat 1 minutes. Stir in oysters, bread crumbs, cheese, wine and mix well. Fill each mushroom cap with mixture. Place in 13 x 9 x 2 inch baking pan and bake 20-25 minutes or until mushrooms are tender. Garnish with chopped pimentos.
