Ingredients

  • 3 cans whole peeled tomato with basil
  • 1 can tomato paste
  • 1 tbsp sugar
  • 1 tbsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp ground cloves
  • oregano
  • basil
  • 1 medium onion
  • 1 head garlic, minced
  • 1 head garlic, roasted
  • 1 lb ground beef
  • 1 cup bread crumbs
  • 2 eggs
  • parsley
  • oregano
  • melted butter
  • grated romano

Preparation

Step 1

Put tomato in blender or food processor. If using fresh herbs put herbs in as well.

Pour into large pot over medium heat. Add sugar, salt, pepper and cloves. Stir. Add tomato paste plus 2 cans water. Stir until smooth. Reduce heat and let simmer. Add any additional herbs.

While that is simmering, put ground beef in bowl and form a hole in the middle. Crack eggs into the hole and scramble. Mix eggs with meat. Sprinkle remaining ingredients over meat and mix well. Roll into balls.

Heat olive oil in frying pan and cook meatballs until brown on outside. Add to sauce but save oil.

Mince onion and add to oil. Cook until browned but not burnt. Add minced garlic but don't cook too long. Add 2 cups water to pan and bring to a boil. Add to sauce, simmering 2-4 hours. Squeeze roasted garlic into the sauce when it is cooked (about 50 min) and cool enough to handle.
