Jicama Spinach

Ingredients

  • 2 tsp. olive oil
  • 1 1/2 tsps. grated pared ginger root
  • 2 garlic cloves, minced
  • 1/2 cup julienned pared jicama
  • 1 1/4 low-sodium soy sauce
  • 8 cups washed spinach leaves
  • 1/4 tsp. fresh ground pepper

Preparation

Step 1

In large nonstick skillet or wok, heat oil; add ginger and garlic. Cook over medium heat 1 minute. Add jicama and soy sauce, cook, sitrring frequently, 2 minutes.

Add spinach, cook, sitrring constantly, until spinach is barely limp, about 2 minutes longer. Sprinkle with pepper.
