Ingredients
- 2 tsp. olive oil
- 1 1/2 tsps. grated pared ginger root
- 2 garlic cloves, minced
- 1/2 cup julienned pared jicama
- 1 1/4 low-sodium soy sauce
- 8 cups washed spinach leaves
- 1/4 tsp. fresh ground pepper
Preparation
Step 1
In large nonstick skillet or wok, heat oil; add ginger and garlic. Cook over medium heat 1 minute. Add jicama and soy sauce, cook, sitrring frequently, 2 minutes.
Add spinach, cook, sitrring constantly, until spinach is barely limp, about 2 minutes longer. Sprinkle with pepper.
