Rex's Chicken with Jalapenos

Ingredients

  • Batter
  • 1 egg
  • 1 pint buttermilk
  • 1 t. Lawrys seasoned salt
  • 1 t. salt
  • 1 t. garlic powder
  • 2 t. sugar
  • Flour Mix
  • 1 1/2 c. flour
  • 1 t. seasoned salt
  • 1 t. baking powder
  • 1 1/2 t. black pepper
  • 1 large or 2 small boneless chicken breast (cut into 1" bite size pieces)
  • Cooking Oil
  • Jalapeno peppers (cut into 1/4" thick slices)

Preparation

Step 1

Marinate chicken in batter for at least 2 hours or overnight. Take chicken out of batter. Roll in flour mixture. Fry floured chicken in hot oil until done. Make sure oil is not too hot, chicken will get too brown too fast. Set aside and keep warm. Put sliced jalapeno peppers in batter, then into remaining flour mixture. Fry until golden brown. The jalapeno peppers are optional but delicious for those who like spicy.
