Ingredients
- 6 ripe tomatoes OR 1 can (1 lb., 3oz.) solid-pack tomatoes
- 1 c. coarse dry breadcrumbs
- 1 tsp. sugar
- Salt
- Pepper
- 3 Tbs. butter
Preparation
Step 1
Skin the ripe tomatoes and cut in slices. Combine crumbs, sugar, salt, pepper and butter. Place a layer of tomatoes in the bottom of a buttered casserole and sprinkle with some of the crumb mixture. Repeat with tomato layers and crumb mixture until dish is filled, then top with the remaining crumb mixture. Bake in a pre-heated oven of 350° for 30 minutes.
OPTION: Use bacon drippings on top of the casserole instead of butter.
