Ingredients

  • 3 eggs
  • ¼ cup melted butter
  • 2 cups toasted pecans
  • 1 tsp. vanilla
  • 2 Tbsp. dark rum
  • ¾ cup dark brown sugar
  • ¾ cup corn syrup
  • 1 unbaked pie shell
  • 1 cup whipping cream
  • 3 Tbsp maple syrup
  • 2 Tbsp Cognac

Step 1




Preheat oven to 375 (190 C). Whisk eggs together then add remaining ingredients, whisking well. Pour into unbaked pie shell. Bake in centre of oven 40-45 minutes until pastry is golden and pie is puffed and just set in the centre. Cool thoroughly before serving with flavoured whipping cream.

Whipping Cream: 1 cup whipping cream, 3 Tbsp. maple syrup, 2 Tbsp. Cognac. Place all ingredients in a large bowl and beat until soft peaks form. Keep refrigerated until ready to use.
