Ingredients

  • 3 C dry lentils
  • 1 large onion
  • Bacon or prosciutto (cut up in small pieces)
  • 1 t butter
  • 1 t oil
  • 16 oz can whole tomatoes or
  • 2 medium chopped fresh tomatoes
  • 1 C chicken broth
  • salt, pepper

Preparation

Step 1

Cook lentils in salt water for fifteen minutes or as directed on the package. Saute onion in butter and oil in a separate pan. Add the bacon or prosciutto, then the can of tomatoes (squeeze each tomato in your hand and then drop into pan). Add chicken broth and spices. Simmer. Serve with small elbow macaroni .
