Ingredients

  • 4 tsp olive oil
  • 2 lbs onions, thinly sliced
  • 1 (32 oz) carton reduced-sodium beef broth
  • 1 1/2 tsp Worcestershire sauce
  • 1/4 tsp ground pepper
  • 4 (1 oz) slices French bread, toasted
  • 1 cup shredded reduced-fat Swiss cheese

Preparation

Step 1

1. Heat the oil in a large nonstick skillet over medium-high heat. Add the onions and cook, stirring frequently, until golden, about 15 minutes.

2. Meanwhile, preheat the oven to 450. Place 4 ovenproof soup bowls on a baking sheet.

3. Bring the broth to a simmer in a large saucepan. Add the onions, worcestershire sauce, and pepper. Reduce the heat and simmer, stirring occasionally, until the onions are tender, about 15 minutes. Ladle the soup into the bowls; top each serving with 1 slice of bread and 1/4 cup of the cheese. Bake until the cheese melts, about 5 minutes, and serve at once.
