Ingredients
- 17 oz. Sweet Potatoes
- 1 tbsp. butter, melted
- 2 tbsp. butter
- 1 med. onion, chopped
- 2 c. cooked chicken, chopped (can use turkey)
- 1 can cream of mushroom soup
- 10 oz. frozen peas and carrots blend
- 1/2 tsp. dried sage, crushed
- 1/2 tsp. ground pepper

Step 1
Mash sweet potatoes until smooth. Beat in the melted butter, set aside.
In a large skillet, heat the 2 tbsp. butter over medium heat. Add onion, cook for 4 - 5 minutes until tender. Stir in chicken, soup, peas & carrots, and sage. Cook and stir until bubbly.
Spoon mashed sweet potatoes into six mounds on top of chicken mixture. Simmer, covered, about 10 minutes or until heated through. Sprinkle with pepper.
