Ingredients
- 1 1/4 c all purpose flour
- 1 c whole wheat pastry flour
- 3 tsp ground ginger
- 2 tsp ground cinnamon
- 1/2 tsp ground allspice
- 1/2 tsp ground nutmeg
- 1/2 tsp ground cloves
- 1/2 tsp baking powder
- 1/4 tsp baking soda
- 1/4 tsp salt
- 1/2 c brown sugar
- 5 TBL butter, soften - unsalted
- 1/2 c molasses
- 1 egg
- ICING (OPTIONAL)
- 2 cups powdered sugar sifted
- 1/4 tsp lemon or vanilla extract
- 3-4 TBL water
Preparation
Step 1
medium bowl, combine flours, spices, baking powder, baking soda, salt
separate bowl, combine sugar, butter, beat on medium speed 2-3 minutes. add molasses , egg and blend. add flour mixture to molasses mixture, beat on low until blend, divide dough in half and wrap each half in plastic & chill for 1-2 hours
pre heat over 350'on flour board, roll dough into a 1/4 " thick circle.
bake 7-8 minutes until firm - let cool on baking sheet for 2 minutes then transfer to wire rack cool completed.
